It’s nearly grilling season and for me, that means it’s also nearly salsa season! I love smothering grilled meats and vegetables with fresh salsas for a perfect pop of acidity and sweetness. This fresh pineapple salsa is essentially the same recipe I use for pico de gallo, though made with pineapple instead of tomatoes. I dollop a huge spoonful of this stuff over my Ginger Beer Braised Pork Carnitas or Tamarind and Lime Marinated Skirt Steak! And because it travels so well, it makes a great addition to any barbecue table!

Choosing the right pineapple is crucial!
Picking a pineapple that is ripe is obviously going to give this salsa its best possible flavor. I know I’ve been disappointed many times when buying one that I thought looked ripe, only to find out once I got home that it was not even close.
The simple trick I have learned when selecting a pineapple is to simply smell it. The one that smells the most like well, a pineapple, is the one that is going to taste like it. (Yes I’m the weird lady at the grocery store smelling all the pineapples.) (And no, you don’t have to stick your face all the way into them. You would most likely be asked to leave. Just hold it up close enough and get a whiff.)
How to make fresh pineapple salsa:
Finely chop your jalapeño and red onion and toss it with the diced pineapple and chopped cilantro. I usually just eyeball it, though I have given instructions with measurements at the bottom of this post. Make adjustments depending on your own tastes. Squeeze over some fresh lime juice and add salt.
Depending on the juiciness of your citrus, you may need to add an extra half or whole lime, but give the salsa time to marry for a few minutes before adding more. After a good half hour in the fridge, give it a taste and adjust for seasoning if needed.
How to serve fresh pineapple salsa:
For a simple, healthy dinner in a flash, I love to grill some chicken or salmon, drizzle it with my favorite Perfect, Sticky Korean Barbecue Sauce, which I always have on hand, and pile on some fresh pineapple salsa! Add some fresh greens and avocado and dinner is served!

Ingredients
- 3 tbsp Jalapeño finely diced
- 4 tbsp red onion finely diced
- 4 tbsp fresh cilantro chopped
- 2 cups fresh pineapple small diced
- 1/4 tsp salt
- 1 – 2 limes juiced
Instructions
- Mix all the ingredients in a large bowl. Allow the salsa to marry about 30 minutes before serving. Taste and add more lime juice or salt if needed.
