Smoked Salmon and Potato Frittata

Frittatas are a great way to breath new life into leftover veggies, meats, cheeses or herbs! They are easy to throw together, making them a great option for a lazy weekend brunch. They can be packed up in lunch boxes or served for dinner with a simple green salad!

This frittata with smoked salmon is a tasty mix of hearty and satisfying ingredients. Rich, flaky salmon and creamy potatoes with fresh flavors of dill and chives. I’ll show you three different ways to prepare it that are so simple and delicious!

Here’s what you need:

Start by peeling and dicing your potatoes. Place them in a medium pot with water and add a half tablespoon of salt. Place the pot on the stove and bring the water to a boil. Continue to boil for 8 to 10 minutes, or until the potatoes are fork tender. Drain them and set them aside to cool.

Whisk together the eggs then add the cream and salt.

Add the flaked smoked salmon, herbs and cooled potatoes.

Stovetop Version

The traditional way to prepare a frittata is to cook it on the stove in a skillet until the edges are set, then pop it in a preheated oven to finish cooking the center. I love this way because you end up with edges that are slightly crisp and a center that is just set.

Heat a heavy bottomed skillet over medium heat for a few minutes. The pan needs to be hot before pouring in the filling to prevent it from sticking.

Add a tablespoon of butter and swirl it around in the pan until the entire surface is coated.

Add the frittata mixture. Don’t touch it. Just let it go to work. You will notice the edges will begin to set and become pale yellow in color. This can take up to 10 minutes.

Once the edges are set, pop the whole thing in the oven and bake at 400 degrees until the center is cooked through. It should be set but not hard. It will continue to cook in the hot pan after you remove it from the oven.

Let it rest a few minutes before serving. Then, tilt the pan and use a spatula to help you slide the whole thing out onto a cutting board.

Oven-Baked Method

This method is great if you’re not wanting to stand at the stove. Just pour the filling into a 9 x 9 inch pan that has been generously sprayed with cooking spray.

Bake in a preheated 350 degree oven for 30 minutes. Let the frittata rest for a few minutes, then cut into squares.

Muffin Pan Method

Another great ‘set it and forget it’ method is to divide the batter into muffin cups. This gives you uniform, single-serving, snack sized portions with crisp edges.

Spray a 12 cup muffin pan with cooking spray. Ladle the frittata batter evenly between the cups. Bake in a 350 degree oven for 20 minutes, or until the frittatas are set.

These are great on the go in lunch boxes or packed up for a park day. I love making big batches of these and freezing them! Warm them for a minute or 2 in the microwave when needed!

Ingredients

  • 8 eggs
  • 1/4 cup heavy cream
  • 1/2 tsp salt
  • 1/2 pound potatoes peeled and diced small
  • 2 tbsp fresh chives minced
  • 1 tbsp fresh dill minced
  • 4 ounces hot smoked salmon
  • 1 tbsp butter for the stove top version
  • 1/2 tbsp salt for boiling the potatoes

Instructions

  • Add the potatoes to a medium pot with a half tablespoon of salt. Fill it with water and heat to a boil. Continue to boil for 8 to 10 minutes or until fork tender. Drain and cool.
    Whisk the eggs with the cream and salt. Add the herbs, salmon and potatoes.

Stove Top Version

  • Heat the oven to 400 degrees.
    Heat a large skillet, preferably cast iron, over medium heat for a few minutes. Add a tablespoon of butter and swirl it around to coat the entire surface of the pan as it melts.
    Pour the eggs with the filling into the pan and cook it until the edges are completely set, about 10 minutes.
    Place the pan in the oven and bake until the center of the frittata is just set, about an additional 10 minutes.

Baking Pan Method

  • Heat the oven to 350.
    Spray a 9 x 9 inch pan with cooking spray.
    Pour the eggs and filling into the pan.
    Bake for 30 minutes, or until set.

Muffin Pan Method

  • Heat the oven to 350.
    Spray a 12 muffin pan with cooking spray.
    Ladle the eggs and filling into the cups.
    Bake for at least 20 minutes, or until set.
