What is ‘baked oatmeal?’
Baked oatmeal is a breakfast casserole made with oats and milk as well as sweetener, fruits, nuts, etc…Eggs are added to bind the whole thing together and baking powder lightens it, preventing it from becoming overly dense. For me, baked oats have been a revelation. It’s like having cake for breakfast.
The sky is the limit as far as flavor combinations go. I’ve been working on a few different variations that I will be posting soon, so stay tuned. Since it is still summer I wanted to create something sunny and bright, full of fresh berries and lemon. This blueberry, lemon and almond baked oatmeal reminds me of a blueberry muffin, only a lot better for you!

I love how easy this recipe is to whip up. All you have to do is mix everything together and let the oven do the rest of the work!
How to make the baked oatmeal:
In one bowl, whisk together the eggs, maple, vanilla, milk and lemon juice. In a separate bowl, combine the oats, nuts, salt, baking powder, cinnamon, zest and blueberries.
Pour the wet ingredients into the dry ingredients and stir well to combine.
Pour the batter into a 9 x 9 inch baking pan that has been sprayed with cooking spray. Place it in a preheated oven and bake for 45 minutes.
This baked oatmeal can be enjoyed immediately or it can be refrigerated and reheated in the oven later. Have your breakfasts for the week ready to go by cutting the oatmeal into 4 squares once it has cooled, wrap the squares individually and refrigerate them until you need them!

Ingredients
- 2 cups rolled oats
- 1 cup sliced almonds
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/4 tsp salt
- 1 zest of a lemon
- 1 cup fresh blueberries
- 2 eggs
- 1/2 cup maple syrup
- 2 1/2 cups milk any kind
- 1 tbsp vanilla
- 1 tbsp lemon juice

Hi Kim! I calculated the nutritional info for ya. Here’s what I found:
These numbers are if you cut the dish into 4 equal squares. I based the serving size off a suggested serving of oats which is a half cup. Several people have told me that serving size is quite large and they cut it into 6 portions or more, which would make the numbers go down. Also, I calculated it using almond milk. Hope this helps! Add this for the first time this morning. Delicious! I added unsweetened coconut flakes because we like coconut and it’s a way to get my husband to eat something healthy. Thinking about changing out almonds for walnuts. And thinking about an extra egg. Great recipe. Will make again and again.

Hello! I would recommend using a plant based milk instead of one that is dairy based. Fortunately, the vast majority of the fat in this dish comes from the almonds which contain mostly monounsaturated fats, which have lots of health benefits. But if you are still concerned it might be too high in fat, simply omit the almonds. I hope that helps!
