Blueberry, Lemon and Almond Baked Oats

Ingredients

  • 2 cups rolled oats
  • 1 cup sliced almonds
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 zest of a lemon
  • 1 cup fresh blueberries
  • 2 eggs
  • 1/2 cup maple syrup
  • 2 1/2 cups milk any kind
  • 1 tbsp vanilla
  • 1 tbsp lemon juice

Instructions

  • In a large bowl, combine the oats, almonds, cinnamon, salt, lemon zest, baking powder and blueberries.
    In a separate bowl, whisk the eggs and add the maple, vanilla, lemon juice and milk.
    Stir the wet ingredients into the dry ingredients.
    Pour the batter into a 9 x 9 inch pan that has been sprayed with cooking spray.
    Bake for 45 minutes at 375 degrees.
