Caesar salad is a bridge between comfort and healthy food. Its trademark dressing is what makes it stand out against other salads. It’s rich and tangy, creamy, umami and sharp, and more versatile than you may think. I’m constantly finding new ways to enjoy it! Give this recipe a try and you will never buy another bottle at the grocery store again!
Here’s what you need:
I have tested this recipe at least a dozen times and I have it down to my exact taste. Feel free to experiment until it tastes like exactly what you want in a Caesar. Add more anchovy if you prefer something a little saltier and umami, or more lemon and dijon for a sharper dressing.
There are 2 different ways you can make this.
It really just depends on what you are looking for texture-wise.
The first method for making this Caesar dressing is simply adding every ingredient to a food processor all at once and letting it go on high for about 30 seconds. This is going to create a nice smooth even dressing and I know for a lot of people this is the way to go. Since it is pretty self-explanatory, I won’t break it down.
The second method requires a little more manual work, but the upside is you don’t have to worry about cleaning all the food processor components. It creates a thicker and more viscous dressing. It isn’t pureéd so it has some texture from the grated garlic and Parmesan.
For the second method:
Whisk together all of the ingredients except for the garlic and parmesan.
Use a microplane to finely grate the garlic.
Use it to grate the parmesan as well. Add them to the bowl and give them a stir.

I’ve seen countless variations of Caesar salads, but there is something about a classic that just does it. You are welcome to add or omit whatever you want. You will notice that I haven’t included any measurements. I just like to measure with my appetite.
Use for your homemade Caesar dressing is not limited to just salads. Toss it with roasted or grilled vegetables. Use it as a dip for chicken tenders or as a spread for sandwiches. Just try making this recipe once and it will become the most popular condiment in your refrigerator!

The Best Creamy Caesar Dressing
Ingredients
- 1 cup real mayonnaise
- 2 tsp dijon
- 1 tsp worstchestershire
- 4 tsp fresh lemon juice
- 1/4 tsp sea salt
- 1 oz parmesan
- 1/2 tsp anchovy paste
- 1 clove garlic
Instructions
For a smooth dressing:
- Add all the ingredients to a food processor and pureé on high for 20 seconds.
For a thick dressing:
- Grate the garlic on a microplane. Add it to a bowl with the mayo, dijon, worschestershire, salt, lemon, and anchovy paste and stir. Grate the parmesan finely on a microplane and fold it in.
To make caesar salad:
- Add fresh, chopped romaine, shaved parmesan, black pepper and croutons to a bowl with the homemade caesar dressing. Toss to combine.
