Avocado Tzatziki Sauce

- 4 ripe hass avocados
- 1 medium cucumber
- 1 garlic clove
- 1/2 tsp salt
- 2 lemons juiced
- 2 tsp olive oil
- 2 tbsp fresh dill chopped
- 1 tbsp fresh parsley chopped

Grate the cucumber with a box grater and place in a mesh strainer over a large bowl. Use a rubber spatula or your hands to squeeze out any excess moisture. Place cucumber in a medium sized bowl.Halve the avocados and remove the pits. Scoop out the meat and place it in a food processor with the salt, juice from one lemon and garlic clove. Blend until smooth and creamy. Pour mixture into the grated cucumber. Add the chopped herbs, olive oil and additional lemon juice if desired. For best results, allow to sit in the fridge for 30 minutes to an hour to allow all the flavors to marry together.
