Cranberry-Balsamic Vinaigrette

Ingredients

  • 1/4 cup dried cranberries
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey
  • 1 tsp dijon mustard
  • 1/8 tsp salt
  • 1/4 cup olive oil

Instructions

  • In a small bowl, pour the balsamic over the cranberries and allow to macerate until the cranberries are plump, which should at least take 2 hours.
    Pour the balsamic cranberries into a blender or food processor with the honey, dijon, salt and olive oil and puree until smooth.
