Crunchy Mango Sesame Slaw

Ingredients

  • 1/2 red cabbage julienned
  • 3 carrots grated
  • 1 red bell pepper julienned
  • 2 2 scallions julienned
  • 1 mango peeled and sliced
  • 4 tbsp cilantro rough chopped
  • 2 tbsp sesame seeds
  • 1 tbsp sesame oil
  • 3 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 2 1/2 tbsp honey
  • 1 tsp sambal or sriracha
  • 1 tbsp grated ginger
  • 1 clove garlic, grated

Instructions

  • Place the cabbage, carrots, pepper, scallions, mango, cilantro and sesame seeds in a large bowl.
    Whisk together the sesame oil, vinegar, soy sauce, honey, sambal, garlic and ginger together in a separate bowl then pour the sauce over the veggies and mix well to coat all the veggies.
