Green Goddess Dressing with Avocado

Ingredients

  • 1 medium avocado pitted and meat scooped out
  • 1 cup greek yogurt full fat
  • 1 tbsp fresh lemon juice
  • 1 clove garlic
  • 1/4 cup chives
  • 1/2 cup basil
  • 1/2 cup cilantro
  • 1 tsp anchovy paste
  • 1/2 tsp salt
  • black pepper to taste

Instructions

  • Place all the ingredients into a food processor and purée for about a minute until very smooth. You may need to stop intermittently to scrape down any bits of herbs hanging out around the top of the bowl. Taste for seasoning and add more lemon juice, salt, etc...
    Keep refrigerated for 1 week.
