Peanut Butter Blondies with Chocolate Ganache Drizzle

Ingredients

  • 1 cup dark brown sugar
  • 1 cup creamy peanut butter
  • 1 cup melted butter unsalted
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour all purpose
  • 1/2 tsp salt

Chocolate Ganache

  • 3 tbsp heavy cream
  • 3 tbsp baking chocolate (any flavor) chopped

Instructions

  • Preheat oven to 350 degrees.
    Whisk together the flour and salt and set aside.
    Cream the brown sugar and peanut butter for a minute or two until well incorporated.
    With the mixer on, pour in the warm, melted butter and continue to beat. Use a rubber spatula to scrape the batter down into the bowl.
    Add the eggs and vanilla and continue to beat.
    With the mixer on low, slowly add the flour and salt until the batter comes together.
    Pour the batter into a 9 x 9 inch pan that is sprayed well with cooking spray and has a square of parchment lining the bottom. Use a rubber spatula or your hands to spread the batter evenly.
    Bake for 30 minutes then allow to cool completely before carefully removing from the pan and cutting into squares.

Make the ganache

  • Pour the chopped chocolate into a medium sized bowl.
    Heat the cream in the microwave for 20 to 30 second until hot but not scalding. Pour the cream into the chocolate and stir until the chocolate has completely melted.
    Pour the ganache into a squeeze bottle or a piping bag, or you could even use a spoon to drizzle the ganache onto the blondies.
