Triple Coconut and Sesame Granola

- 3 cups oats
- 1 1/2 cups puffed rice
- 1 cup sliced almonds
- 1 cup shredded coconut unsweetened
- 1/2 cup sesame seeds
- 1/2 tsp ground cinnamon
- 2 limes zested
- 1/2 tsp salt
Wet Ingredients
- 1/2 cup honey
- 1/2 cup coconut oil
- 4 tbsp coconut sugar
- 2 tbsp sesame oil

- 1/2 cup dried pineapple
- 1/2 cup dried banana chips

Heat oven to 300 degrees. Mix oats, rice, almonds, coconut, sesame seeds, cinnamon, salt and lime zest together in a large mixing bowl. In a small pan, add the honey, coconut sugar, coconut oil, sesame oil and heat on medium high until it becomes to a gentle boil and the sugar is dissolved. Immediately pour the hot syrup over the dry ingredients and use a large spoon or rubber spatula to mix until totally combined. Spread evenly on a large sheet pan and bake in the preheated oven for 30-35 minutes, stirring halfway through the baking process. Remove from the oven and allow to cool completely then toss with the pineapple and banana. Store in an airtight container.
